SPAGHETTI FOR VEGETERIANS (not only)
With extra virgin olive oil MOLIVO
Ingredients
1 cup extra virgin olive oil MOLIVO
250 gr of tarama (salted fish roe)
500 gr spaghetti No. 5
2 cups of onions, finely cut
1 cup of ground biscuit
2 cups of walnuts, finely cut
2 cups of tomato juice
3 gloves of garlic
1 leaf of laurel, nutmeg
cloves (clous de girofle)
wooden mortar
salt, pepper, parsley
Execution
The onions are sauteed with the oil in a pan. Add the tarama (after removing its salt by immersing it in lukewarm water), and when slightly roasted, poor the tomato juice. Add laurel, spices, garlic, let the sauce boil till it firms and remove it from the heat sprinkling with parsley. In the meantime the macaroni has been boiled, salted and strained. Serve hot as follows: Put in a large platter a layer of macaroni. Sprinkle with ground biscuit and walnuts and cover with a layer of sauce. Continue likewise till both macaroni and sauce finish.
