From the start we were export-oriented, as the extra virgin olive oil of our island is strongly appreciated abroad. Early on we gave priority to conditioning the product in small packages adapted to the needs of the consumer. Continuous investments over the years have assured that modern technology is utilized in the production and commercialization of olive oil. At the same time we have been active in the collective organization of the olive oil sector through the Chamber of Commerce of Lesvos and the Greek Association of Industries and Processors of Olive Oil (SEVITEL).

The variety Kolovi which is found exclusively here, has been selected by a painstaking trial and error method over the centuries as the variety best adapted to the climate and soil of the island. The oil produced has the following characteristics:
- Bright golden colour, due to the low chlorophyl content.
- Intense aroma, due to the mountainous terrain and the limestone soil.
- Light texture, due to the relatively high percentage of polyunsaturated lipids.
Its flavour is relished by consumers, who find in it an excellent means of initiation to the pleasures of Mediterranean cuisine. For all these reasons the European Community has officially recognized the virgin olive oil of Lesvos as a product of “Protected Geographical Indication (P.G.I.).

When the season comes they pick up the olives by hand, mostly with the help of relatives and friends, and bring them to the mill. The centrifugal presses are modern, clean and efficient. The olives are pressed within 24 hours of picking, at moderate temperatures (less than 27 degrees C), each lot separately, and the oil is placed for storage in stainless steel tanks according to quality. In our factory the olive oil is first of all carefully controlled both from a chemical and an organoleptic point of view. Then it is left to settle before being filtered. We strive to achieve a product with consistently optimum characteristics, known and appreciated by the consumers. The whole factory is conceived so as to assure an impeccable hygiene. Every operation follows the guidelines of the HACCP (Hazard Analysis at Critical Control Points) plan, which lay down all the necessary measures for a safe product of high quality. Our management system is certified according to the quality standards ISO 22000:2005 and IFS Food V.6. We export all over the world to countries as diverse as Germany and Japan, Australia and Finland. We also sell to connoisseurs of olive oil in Italy, Spain and France. Everywhere we strive to adapt to the local conditions and satisfy the specific needs of our customers. This is maybe the secret of our longevity!
